Abstract
Die europäische Kulturgeschichte ist reich an Benimm- und Verhaltensvorschriften zur Tischkultur. Im Laufe vieler Jahrhunderte bilden sich, im höfischen Kreisen entwickelt, bestimmte Regeln für das richtige Verhalten innerhalb einer Tischgemeinschaft heraus, von welchen nicht wenige heute noch gültig sind. Am Beispiel von "Tischzuchten" (= didaktische Texte und Dichtungen, die insbesondere das richtige Verhalten bei Tisch lehrten) aus dem Mittelalter wird dargelegt, dass am Anfang gutes Benehmen und die höfische Etikette im Vordergrund stand. Im 17. Jahrhundert ging es hingegen vor allem um die kunstvolle Darbietung der Speisen.
Translation of abstract (English)
European cultural history is rich in codes of behavior concerning table culture. In the course of many centuries, developed in court circles, certain rules for the correct behavior within a table community are formed, of which quite a few are still valid today. Using the example of medieval "Tischzuchten" (= didactic poems and texts which serve in particular to teach the correct behavior at the table) shows that in the beginning good manners and courtly etiquette were in the foreground. In the 17th century, however, it was mainly about the artful presentation of the fancy food and dishes.
